Red Onion Compote

Materials:
  • 1/2 c. water
  • 1-1/4 c. beer
  • 1/2 c. brown sugar
  • 2 large red onions, sliced
  • salt & pepper to taste
Methods:
  1. Combine beer, water and sugar in a large sauce pan.
  2. Stir in onions.
  3. Bring to a full boil over medium-high heat.
  4. Reduce heat to bring down to a simmer.
  5. Simmer ~1 hour until reduced to ~2 cups total.
  6. Let cool completely.
  7. Great on burgers & sandwiches :)
