- 4 or 5 skinless, boneless chicken breasts, cut into chunks or strips
- 4 Tbsp Olive Oil
- 1 medium onion, chopped
- 4 cloves garlic
- 2 Tbsp butter
- 4 to 5 Tbsp mild red curry paste, to taste
- 2 tsp sugar
- 1/2 cup (canadian!) maple syrup
- 1-1/2 cups chicken broth
- 1 cup light cream
- 1/2 to 1 cup diced red pepper
- 2 tsp chives
- 4 oz cream cheese
Methods:
- Cook chicken pieces in 2 Tbsp of olive oil and set aside.
- Saute onion and garlic in 2 Tbsp of olive oil and butter for 2 min.
- Add red pepper and saute another 1-2 min.
- Add mild curry paste and cook 1 min.
- Add sugar and stir until mixture starts to carmelize (~1-2 min.)
- Add in maple syrup and cook another 1 min.
- Add chicken broth and cream and boil until reduced and thickened (may take 20+ min.).
- Add chives and cooked chicken to the sauce and simmer for a few more minutes.
- Salt and pepper to taste.
- Add cream cheese and stir until melted and smooth.
- Serve on egg noodle they soak up the most of the yummy sauce).
Notes:
It's important NOT to tell your guests all the bad things that go into this. It's terribly yummy, so let them enjoy it without the guilt :)
