Materials:
Chili:
- 1 onion, chopped
- 4 cloves garlic
- 1-1/2 lbs ground turkey
- 2 (4 oz) cans diced green chili peppers
- 1 Tbsp ground cumin
- 1 Tbsp dried oregano
- 1 tsp ground cinnamon
- 1 tsp cayenne pepper (to taste)
- 3/4 tsp ground white pepper (to taste)
- 3 (15 oz) cans cannellini beans
- 2-1/2 cups chicken broth
- 2 cups shredded Monterey Jack Cheese
Garnish:
- Sour Cream
- Fresh Cilantro
- Tortilla Chips
Methods:
- In a large pot over medium heat, saute the garlic, onion and tur key for 10 minutes, or until turkey is well browned.
- Add the chili peppers, cumin, oregano, cinnamon, cayenne and white pepper and saute another 5 min.
- Add two cans of the beans (drained) and the chicken broth to the pot.
- Take the third can on beans and mash by fork or puree in a blender or food processor.
- Add mashed beans and cheese to the pot.
- Stir well and simmer for 10+ min under thickened and cheese is melted.
- Serve with a dollop of sour cream and some cilantro on top with chips to dip!
