- 1-1/2 c. oatmeal
- 1/4 c. ground flax
- 1/2 c. flour
- 1/4 c. brown sugar
- 2 tsp. baking soda
- 1 tsp. salt
- 2 eggs
- 1 c. milk
- 1 tsp. vanilla
- dash nutmeg
Methods:
- Combine oatmeal, flax, flour, sugar, soda, nutmeg and salt.
- In a separate bowl, combined egg, milk and vanilla.
- Add egg mixture to dry mixture. mixing just until moistened.
- For each pancake, pour 1/4 c. batter into hot griddle.
- Turn when tops are covered with bubbles and edges look cooked.
- Excellent hot with butter and honey, and also cold.
