- 1 Tbsp. butter
- 3 cloves garlic, minced
- 1 small onion
- 1 (10 oz.) package frozen spinach
- 1 (4.5 oz.) can mushrooms
- 1 (6 oz.) package herb & garlic feta
- 1 (8 oz.) package cheese (swiss or other)
- pie crust
- 4 eggs
- 1/2 c. milk
- salt and pepper, to taste
- pinch nutmeg
Methods:
- Preheat oven to 375F.
- Saute onion and garlic until translucent and then add in spinach and mushrooms.
- Stir in feta and 1/2 of the cheese.
- Spoon the mixture into the pie crust.
- Cover with remaining cheese.
- In a bowl, whisk eggs, milk, salt, pepper and nutmeg.
- Pour egg mixture into pie crust.
- Bake 35-40 min or until center is firm.
- Let stand 10 min. before serving.
